My girlfriend found a fantastic spicy rub to put on chicken.  It’s not a lingering spicy however, so don’t think like jalapeno burning your mouth for 10 minutes type.  This is more like black pepper spicy.  We also tried the same rub on a rack of ribs and we were not disappointed.  The chicken was was a huge hit at our party so I thought I would share the rub recipe.
NOTE: The amounts here are going to seem odd.  The reason for this is because I am using Paprika to scale this bad boy down a little bit.  It’s made to originally make for 32 chicken breasts.  Chances are your not making that many, so this is for about 6.
Ingredients
  • 1/12 cup paprika
  • 1/2 tablespoons cayenne pepper
  • 5/6 tablespoons freshly ground black pepper
  • 1 tablespoons garlic powder
  • 1/2 tablespoons onion powder
  • 1 tablespoons salt
  • 5/12 tablespoons dried oregano
  • 5/12 tablespoons dried thyme

Preparation

In a medium bowl, combine the paprika, cayenne pepper, ground black pepper, garlic powder, onion powder, salt, oregano, and thyme. Mix well, and store in a cool, dry place in an airtight container.

Just add the rub.  Grill, bake, or however you want to prepare it, and it should come out spicy and delicious.
